Kefir is a fermented dairy drink, made by combining milk with kefir grains — not actual grains, but rather a symbiotic culture of bacteria and yeast (often called a SCOBY). These grains initiate fermentation, breaking down lactose and producing a tangy, slightly fizzy drink that’s rich in live probiotics.
It’s been consumed for centuries in traditional cultures as a healing tonic, known for its ability to support digestion, boost immunity, and help rebalance the microbiome.
